MACHINE begins its 2010 programming with MACHINE Mini # 1 a Soul Food Buffet on Sunday, 17 January 2010. This event is part of MACHINE Gastronomy Program. MACHINE will prepare and discuss the history of this style of cooking and its connection(s) to African and European styles of preparation followed by buffet. Traditional dishes like cornbread, red beans with rice and gumbo will be served while also adding a few Soul Food twist to traditional Belgian foods.
MACHINE Mini#1 begins at 17h with social followed by discussion and dinner. MACHINE ask that you please reserve your space by return e-mail no later then midnight Friday 15 January 2010 .

Short History of Soul-Food
Soul-Food derived from southern dishes during the American slavery era. It’s an African American cuisine and is also referred to as Southern or comfort food and serves as the foundation for many African-American families but has worked it’s way into American cuisine and and is popular worldwide. You will find soul food restaurants in Japan, India, Germany and yes, Belgium. Although often criticized for it’s high fat and cholesterol content Soul Food cooking over the last 25 years has developed into a more healthy style of preparing the meals without losing what makes Soul Food special…the flavor which is how the food will be prepared for this presentation
